150 g Almond Flour
65 g Powdered Erythritol
1 Egg White
1/2 tsp Baking Powder
1/2 tsp Lemon Extract
Zest of 1/2 Lemon
Low-carb Chocolate to Decorate
Ca. 12 naughty Red Smarties –
(DO NOT EAT)
Method
- Preheat oven 160C
- Whisk egg whites, lemon extract and powdered erythritol until stiff.
- Mix together all dry ingredients.
- Fold dry ingredients into egg white and mix first with a fork, and then form into a ball of dough with your hands.
- Roll the dough between two sheets of grease proof paper until 1/4 cm / 1/8 inch thick.
- Cut out round biscuits with a biscuit cutter.
- Bake in oven for ca 15 minutes or until light brown.
- When cooled, using a tooth-pick, I painted the antlers and eyes onto the biscuits with melted chocolate.
- blob of chocolate holds the naughty red smarty nose in place.
