Ingredients

  • 150 g Almond Flour

  • 65 g Powdered Erythritol

  • 1 Egg White

  • 1/2 tsp Baking Powder

  • 1/2 tsp Lemon Extract

  • Zest of 1/2 Lemon

  • Low-carb Chocolate to Decorate

  • Ca. 12 naughty Red Smarties –

  • (DO NOT EAT)

Method

  • Preheat oven 160C
  • Whisk egg whites, lemon extract and powdered erythritol until stiff.
  • Mix together all dry ingredients.
  • Fold dry ingredients into egg white and mix first with a fork, and then form into a ball of dough with your hands.
  • Roll the dough between two sheets of grease proof paper until 1/4 cm / 1/8 inch thick.
  • Cut out round biscuits with a biscuit cutter.
  • Bake in oven for ca 15 minutes or until light brown.
  • When cooled, using a tooth-pick, I painted the antlers and eyes onto the biscuits with melted chocolate.
  • blob of chocolate holds the naughty red smarty nose in place.

  • MACROS: 1.3g Carbs per biscuit
