ORANGE CREAM BISCUITS

Sometimes nothing but a biscuit/cookie will do. These Keto butter biscuits with a delicious creamy orange filling are for days when you could just eat a whole batch of biscuits, but are desperately trying to be good… perfect for pairing with a cup of tea.

The term biscuit comes to English from the 🇫🇷 French biscuit (bis-qui), which itself has a Latin root: panis biscotus refers to bread twice-cooked.

The earliest surviving example of a biscuit is from 1784, and it is a ship’s biscuit. They were renowned for their inedibility, and were so indestructible that some sailors used them as postcards…it is said.

It can be viewed in the National Maritime Museum, Greenwich, London… That’s also where Nelson’s blood stained jacket can be found, which he wore at the Battle of Trafalgar…. 

…but I digress…

Ingredients

  • 100 g Almond Flour

  • 4 tsp Coconut Flour

  • 60 g Unsalted Butter – melted and cooled

  • 25 g Erythritol

  • 5 drops Liquid Sweetener (or increase erythritol)

  • 1 small Egg

  • 1 tsp Baking Powder

  • 1/4 tsp Xanthan Gum

  • 1/4 tsp Himalayan Salt

  • 1-2 tsp Orange Extract Flavouring (try dough for taste, add more if necessary)

  • BUTTERCREAM

  • 50 g Butter

  • 50 g Erythritol

  • 1 tsp Orange Extract

Method

  • Preheat oven 160 C
  • Whisk butter and erythritol until creamy.
  • Add egg, vanilla extract and liquid sweetener. Whisk.
  • Sieve coconut flour, baking powder, salt and Xanthan gum. Add to mixture. Whisk.
  • Add the almond flour.
  • Form into a dough with your hands.
  • Roll into a sausage and divide/cut into ca. 24 pieces.
  • Roll each piece into a little ball, flatten slightly and form into a round (same sized) shape.
  • found the dough is too soft to cut into round shapes with a biscuit cutter.
  • Bake the biscuits in the oven for 15-20 minutes or until slightly browned.
  • Whilst they are cooking, make the buttercream.
  • Whisk butter, erythritol and orange extract with a whisk und light in colour and creamy.
  • Sandwich the biscuits together with the buttercream.
