Mushroom Bhaji is a wonderfully delicious spiced Indian mushroom recipe. Basically, it is pan-fried mushroom paired with traditional Indian spices. This is a Keto version on Mushroom Bhaji

500 g Mushrooms Quartered
1/2 Small Finely Chopped Onion
3 Crushed Garlic Cloves
1 tsp Ground Ginger
2 tsp Ground Coriander
2 tsp Ground Cumin
1 tsp Ground Turmeric
1 tsp Garam Masala
1 tbsp Tomato Purée
100 ml Vegetable Stock
Squeeze of Lemon to taste
Salt and Pepper
1 tbsp Chopped Coriander
Method
- Fry the mushrooms in very hot oil for 5-10 minutes until they are brown and cooked (if the oil isn’t hot enough they will release too much water) and all water has evaporated.
- Remove from the pan and set aside.
- Turn the heat to low, add another drizzle of oil to the pan and fry the onion with a pinch of salt for 10 minutes until soft.
- Add the garlic and cook for a further 2-3 minutes.
- Add all spices and tomato purée, and cook for a few minutes.
- Add the vegetable stock and mushrooms.
- Simmer gently for 10 minutes.
- Season to taste with salt and pepper, lemon juice and coriander leaves.
- Serve with naan bread.
