Ingredients

  • 300 g Block Mozzarella (not in Brine)

  • 2 Eggs

  • Salt and Freshly Ground Pepper

  • Coating Mixture

  • Frying Oil – Cold Pressed Rapeseed Oil / Coconut Oil

  • Coating
  • 50 g defatted Peanut Flour

  • 30 g Almond Flour

  • 110 g grated Parmesan

  • 1/2 tsp Garlic Powder

  • 1/2 tsp Onion Powder

  • 1/2 tsp Salt

Method

  • Cut Mozzarella into approximately 16 1cm sticks.
  • Sprinkle with salt and pepper.
  • Coat firstly in egg and then in the coating.
  • Some recipes call for you to coat the sticks twice, and then pop into the freezer before frying. I didn’t.
  • Heat the oil in a deep saucepan until slightly smoking.
  • Fry until golden brown for about 30 seconds. Remove from heat and drain on paper towels.
  • Eat immediately with homemade ketchup or mayonnaise.
