I know… they’re supposed to look like Ghosts but in reality they look a bit like those brown emoji’s on my iPhone…

LEMON MERINGUE GHOSTS

I know… they’re supposed to look like Ghosts but in reality they look a bit like those brown emoji’s on my iPhone… But they do taste delicious!

Ingredients

  • 4 Egg Whites

  • 3 tbsp Erythritol

  • 1/2 tsp Lemon Extract

  • 1/4 tsp Cream of Tartar

  • 4 drops Liquid Stevia

  • Pinch of Salt

Method

  • Mix all ingredients and whisk until stiff
  • Onto a lined baking sheet, pipe the the meringue mixture into swirls
  • Bake at 70 C for 1,5-2 hours, or until hard and crunchy
  • Turn the oven off and leave for an hour before removing
  • Eyes are made of low-carb chocolate – (I use my home-made chocolate)

Notes

  • MACROS: Zero Carbs
