I wanted to show you my recipe for making Lamb Samosas because they are just that little bit better than anything you can buy in a shop…. well that’s what my lovely other half said… but he’s obviously biased

Ingredients dough

  • 200 g Grated Mozzarella Cheese (Block not the wet in a bag type)

  • 65 g Grated Cheddar Cheese

  • 1 medium Beaten Egg

  • 70 g Almond Flour

  • 1 tsp Xanthan Gum

  • Salt and Pepper

  • Filling
  • 500 g Ground Lamb

  • 1 small Finely chopped Onion

  • 2 tsp Grated Ginger

  • 2 tsp Crushed Garlic

  • 1 tsp Sweet Chilli Powder (less for less hotness)

  • 1 tsp Garam Masala

  • 1 tsp Ground Cumin

  • 1 tsp Mild Curry

  • 1/2 tsp Pink Himalayan Salt

  • 2 tsp Freshly pressed Lemon

  • 1 tbsp Freshly chopped Coriander

  • 1-2 Finely chopped Red Chilli

  • 2-3 tbsp Healthy Oil (for frying)

Method Pastry

  • Mix Mozzarella and Cheddar Cheese together. Microwave in 30 second bursts, stirring each time until completely melted
  • Preferably using a food mixer (a hand held mixer with the dough attachment will also do) mix the cheese until it’s slightly cooled, then add the beaten egg. Stir until the egg and cheese are combined.
  • Slowly add the dried ingredients and mix until you have a nice dough texture
  • Wrap in cling-film and cool in the fridge for an hour
  • Filling
  • Fry the onions, ginger and garlic on a low heat for 2-3 minutes
  • Mix all the dry spices (not the coriander) together.
    Add the lamb mince and fry for 2-3 minutes
  • Add the dry spices, salt and lemon juice. Put the lid on the pan and cook for a further 10-15 minutes, stirring occasionally
  • Add the chopped coriander and chilli.
    Remove from the heat, and allow to cool completely before using to fill samosas
  • When cooled roll out the dough. Cut into 4.5 inch / 11cm squares
  • Put the filling in the middle of the squares. Fold the square until it makes a triangle. Press down edges. Insert the point of a knife into the top to allow moisture to escape
  • Bake in the oven 180C for 15-20 minutes or until golden brown
  • Serve with Indian Green Yoghurt
