GERMAN SCHNITZEL

Schnitzel is one of the most popular German dishes, traditionally from Vienna made of veal (Wiener Schnitzel) and coated with breadcrumbs, fried and served with a slice of lemon.

For us Keto and Low-Carb(ers) breadcrumbs can be a problem, so I thought I would invent my own. It’s called ‘Michelle’s Secret Breadcrumbs’ and is made of:

Ingredients

  • 2 Boneless Pork Loin Chops á ca. 160g

  • 2 tsp Mustard

  • 1 medium Egg

  • 1/2 Small Lemon

  • 2 tbsp Healthy Oil for Frying

  • Coating
  • 50 g Defatted Peanut Flour

  • 30 g Almond Flour

  • 110 g Grated Parmesan

  • 1/2 tsp Garlic Powder

  • 1/2 tsp Onion Powder

  • 1/2 tsp Salt

Method

  • Using a meat tenderiser (a hammer) bash the schnitzel slightly on both sides and season with salt
  • Take two flat bowls. Put whisked egg in one and the peanut breadcrumbs in the other
  • Using a knife, spread both sides of the schnitzel with the mustard
  • Coat the Schnitzels then first in the egg mixture, and then in the breadcrumbs. You won’t use it all; it keeps well in an airtight container for weeks.
  • Shallow fry the Schnitzels evenly in hot oil for 2-3 minutes on each side until they are golden yellow
  • Remove from the frying pan and put onto kitchen paper
  • Garnish the finished schnitzel with lemon wedges
