GERMAN ADVENT COOKIES – GOOGLY EYES

KULLERAUGEN – It’s a German tradition to celebrate ADVENT on the four Sundays preceding Christmas, with the successive lighting of a candle and eating small Xmas cakes and biscuits.

They are easy to make and fabulous to eat, on top of their heavenly appearance and they’re pretty handy to have around in the kitchen for a quick, snatched burst of energy at any time, not just at Advent.

Today is the first Advent and I made the first of several Xmas biscuits – Googly Eyes 👀 😆 – Don’t ever say the German’s don’t have a sense of humour!

Ingredients

  • 200 g Almond Flour

  • 115 g Unsalted Butter – melted and cooled

  • 50 g Erythritol

  • 10 drops Liquid Sweetener

  • 1 large Egg

  • 1/2 tsp Baking Powder

  • 1 tsp Lemon Essence (try the mixture for flavour)

  • 2 tbsp Home Made Low Carb Jam

  • 1/2 tsp Xanthan Gum

  • 1/2 tsp Himalayan Salt

  • 1 Egg White

  • 25 g Flaked Almonds (crushed in a bag)

Method

  • Preheat the oven to 160 C
  • Mix all the dry ingredients together in a mixing bowl: almond flour, erythritol, xanthan gum, baking powder, salt.
  • Add the melted butter and egg and mix with a fork to form a dough.
  • Grate the chocolate, making sure there are some 1/8-1/4 inch bits.
  • Add the grated chocolate to the dough, mixing well.
  • Divide the mixture into 10 little balls (I use a tablespoon for this because the dough is quite wet)
  • Press them 1/4 inch flat on a lined baking tray.
  • Bake for 12-15 minutes or until slightly golden.
  • Leave to cool on a rack to harden up.
