Ingredients

  • 3 (500g) Chicken Breasts

  • 6 Garlic Cloves, crushed

  • 2 tbsp Rapeseed Oil

  • 1 tbsp Garlic Infused Olive Oil

  • 100 g Butter

  • 150 ml White Wine

  • 150 ml Chicken Stock (Cube)

  • 1 tsp Liquid Sweetener

  • 1 tbsp Fresh Lemon Juice

  • Zest of One Lemon

  • 300 ml Cream

  • 2 tbsp Crème fraîche

  • 1/2-1 tsp Chilli Flakes

  • 1-2 tsp Chopped Parsley

  • Salt and Pepper

Method

  • Fry the 3 chicken breasts on both sides in very hot rapeseed oil for 2 minutes each side, until golden brown. Take each one out of the pan and slice in half. They should still look uncooked in the middle. Fry the six pieces of chicken, raw side down, for a further two minutes until cooked through and golden brown – I find this method keeps the chicken mouthwateringly juicy.
  • Take them out of the pan and set them aside, cover with foil.
  • In the same frying pan, add the olive oil, the six crushed garlic cloves and fry on a low heat for a minute.
  • Add the wine, sweetener and chicken stock, put the lid on and cook for a further 5 minutes.
  • Pour the cream and crème fraîche into the sauce and stir well.
  • Add lemon juice, lemon zest, chilli flakes and parsley, and season with salt and pepper.
  • Place the chicken pieces including juices into the garlic butter sauce.
