Celeriac, the unsung frog prince of winter vegetables, also known as celery root, knob celery and turnip-rooted celery. Peel off its warty exterior and you’ll uncover the royal vegetable within: a perfect, ivory-fleshed, winter alternative to potatoes and other starch vegetables.

Washed, smothered in cold pressed olive oil and lightly salted… bake in the oven for 20-30 minutes… 

Eat with a chunk of salted butter – Delicious!

Ingredients

  • 1 Small (450g) Celeriac / Root Celery

  • 1 tbsp Salted Butter

Method

  • Preheat the oven to 200 C
  • Wash Celeriac and remove any visible roots, smother in cold pressed olive oil and rub all over with salt. lightly salted.
  • Bake in the oven for 20-30 minutes
  • Cut celeriac in half and smother with a chunk of salty butter
