Ingredients

  • 100 g Cocoa Butter

  • 1 1/2 tbsp Cocoa Powder

  • 1 1/2 tbsp Coconut Milk Powder

  • 50 g Powdered Erythritol

  • 5 drops Liquid Stevia

  • 1/2 tsp Himalayan Salt

  • 1/2 tsp Vanilla Extract

Method

  • Note: It is essential that no water gets into the double boiler as the chocolate will separate and become gritty.
  • Melt the cocoa butter gently in a double boiler saucepan, or in a dish sat on top of a pan of simmering water just until it melts
  • Remove from the heat
  • Gradually whisk the cocoa powder into the melted cocoa butter
  • Add powdered erythritol, whisking in a little at a time
  • It’s important to whisk everything well to avoid clumping
  • Add the vanilla extract at the very end
  • Pour the chocolate into molds and pop in the fridge to set
