100 g Cocoa Butter
1 1/2 tbsp Cocoa Powder
1 1/2 tbsp Coconut Milk Powder
50 g Powdered Erythritol
5 drops Liquid Stevia
1/2 tsp Himalayan Salt
1/2 tsp Vanilla Extract
Method
- Note: It is essential that no water gets into the double boiler as the chocolate will separate and become gritty.
- Melt the cocoa butter gently in a double boiler saucepan, or in a dish sat on top of a pan of simmering water just until it melts
- Remove from the heat
- Gradually whisk the cocoa powder into the melted cocoa butter
- Add powdered erythritol, whisking in a little at a time
- It’s important to whisk everything well to avoid clumping
- Add the vanilla extract at the very end
- Pour the chocolate into molds and pop in the fridge to set
