My own methodology is constantly evolving the more I cook and the more I learn from others, from those who cook or write about the culture of food.

Ingredients

  • 1 Large Red Pepper

  • 1 Large Yellow Pepper

  • 2 Crushed Garlic Cloves

  • 400 g Chopped Tomatoes

  • 300 ml Double Cream

  • 1/2 tsp Chilli Flakes

  • 1/4 tsp Salt

  • 1/4 tsp Freshly Ground Pepper

  • 1 Crumbled Vegetable Stock Cube

  • 1 tbsp Chopped Parsley

  • 1 tbsp Chopped Basil

  • 300 ml Double Cream

  • 1 tsp Drops of Liquid Sweetener or 1-2 tsp Erythritol (test for taste)

  • Juice of one large Lemon

  • Healthy Oil

  • Cauliflower rice

Method

  • Cut the peppers in large slices after removing seeds and white bits.
  • Fry the peppers in hot oil, continually stirring until they are slightly soft but still crunchy. Set aside.
  • Add crushed garlic and fry for 2-3 minutes.
  • Add the chopped tomatoes, crumbled stock cube, chilli, sweetener, lemon, Basil, parsley, salt and pepper.
  • Cover and simmer for 10 minutes until combined.
  • Optionally, mash the sauce with a potato masher to make sure the tomato chunks are not too big.
  • Add the double cream. Try it for taste and amend seasoning to your liking.
  • Add the peppers.
  • Serve with Konjac Rice
