CELERIAC RÖSTI (PUFFER/FRITTER)

Potato Rösti / Puffer, a quintessential German food, beloved across every region of Germany, is a great favourite with German children and can be found as street food at local Volksfests, Fasching, Karneval and Christmas Markets.

In particular these German Rösti bring back memories of visiting my very lovely German mother-in-law who mostly served them with her delicious home-made apple sauce.

Potatoes and apples are discouraged when following a Keto/low-carb diet, so I thought I would make my own Keto friendly version, made with celeriac and Avocado dip.

Ingredients

  • 250 g Grated Celeriac

  • 1/2 medium Onion

  • 2 small Ripe Avocado

  • 125 g Greek Yoghurt

  • 1 tbsp Freshly chopped Parsley

  • 2 tbsp Fresh Lemon Juice

  • 2 medium Eggs

  • 50 g Grated Mozzarella

  • 2 tbsp Healthy Oil or Butter

  • Himalayan Salt and freshly ground Pepper

Method

  • Grate celeriac and onion. Sprinkle with 1tsp of salt. Mix well and leave for 20-30 minutes
  • Halve avocado and remove pulp. Mix avocado, Greek yoghurt, lemon, parsley, salt and fresh black pepper. Season to taste
  • Put the grated celeriac + onion in a clean tea towel and squeeze out excess water
  • Mix cheese, eggs, grated celeriac, salt and pepper in a bowl
  • Heat Butter/Oil in a frying pan
  • Spoon four heaps of the mixture in the hot oil.  Fry for 5-8 minutes each side on a medium heat until golden
  • When finished, put the Rösti on kitchen paper to soak up extra oil
  • Serve with the avocado quark
