BROCCOLI AND STILTON PARCELS

These versatile gluten free, Keto pastry, broccoli and stilton parcels are a fabulous snack for brunch, a light supper or almost any meal come to think of it. Serve warm or at room temperature with a salad of tomato and red onion lightly dressed with garlic, olive oil and white-wine vinegar. 

We are enthusiastic National Trust members, and we love that the National Trust maintains grandiose stately homes, and also offers a glimpse of quintessential British gardens. But it’s their tea-rooms that we head for before embarking on a journey through British history.

National Trust tea-rooms are a great place for a cup of tea and slice of homemade cake, or a savoury Broccoli and Cheese Filo Parcel – which gave me the incentive to create this wonderful broccoli and stilton parcel recipe..

Mix Stilton cheese with Broccoli, and pack it into little triangular parcels… the combination of pastry, broccoli and Stilton is delicious…

Ingredients

  • For the dough:

  • 200 g grated Mozzarella Cheese

  • 65 g grated Cheddar Cheese

  • 1 beaten Egg

  • 70 g Almond Flour

  • 1 tsp Xanthan Gum

  • Salt and Pepper

  • FILLING

  • 70 g Blue Stilton

  • 130 g cooked Broccoli

  • 40 g Sauer Cream

  • Grated Cheddar for the base

Method

  • Mix Mozzarella and Cheddar Cheese together. Microwave in 30 second bursts, stirring each time until completely melted.
  • Preferably using a food mixer (a hand held mixer with the dough attachment will also do) mix the cheese until it’s slightly cooled, then add the beaten egg. Stir until the egg and cheese are combined.
  • Slowly add the dried ingredients and mix until you have a nice dough texture.
  • Wrap in cling-film and cool in the fridge for two hours.
  • Melt the Stilton in a saucepan.
  • Add the broccoli and mix well.
  • Add the sour cream.
  • It shouldn’t need salt & pepper, but taste it for flavour.
  • Roll out the dough.
  • Cut into 4.5 inch / 11cm squares.
  • Put grated cheese and blue stilton diagonally (corner to corner) across the dough squares.
  • Fold the square until it makes a triangle. Press down edges. Insert tge point of a knife into the top to allow moisture to escape.
  • Bake in the oven 180C for 15-20 minutes or until golden brown.
