BACON WRAPPED ASPARAGUS

This asparagus recipe also makes for a great snack. It is quick and easy to make, low carb, and the perfect Keto diet snack.

When I lived in Germany, I spent many a merry time in Rheinhessen and the Pfalz, which are the two largest wine and asparagus growing areas in Rhineland-Palatinat.

A yearly Spargel Fest – Asparagus Festival – was always a wonderful excuse to eat, drink and be merry – and contrary to common belief, the German’s DO have a Great sense of humour!

Ingredients

  • 15 Asparagus

  • 5 Rashers Bacon

Method

  • You should ideally use a special Asparagus Pan for cooking asparagus, where the stalk of the asparagus is cooked in boiling water and the tip is above the water and gently steamed. This stops the delicate tips from being overcooked.
  • Steam the asparagus until it still has a ‚bite‘.
  • Wrap in bacon and fry without extra oil in a frying pan.
  • I don’t bake it in the oven because the asparagus tends to become too dry.
