FRENCH APPLE TART

This tart is a reminisce of days spent in Strasbourg, which was about an hour’s drive from where I lived in Germany.

I know apples are to be indulged with caution when following a Keto diet, but if you use cooking apples at only 9g carbs per 100g, you can just about get away with it, if greed doesn`t get in the way that is!

You must admit, this French Apple Tart looks like a glorious disc of winter sunshine on a plate – and it tastes like it, too!

Ingredients

  • Base:

  • 180 g Almond Flour

  • 65 g Erythritol

  • 1 tsp Cinnamon

  • 85 g Melted Butter

  • Juice of one Lemon

  • 2 Cooking Apples

  • Topping:

  • 50 g Melted Butter

  • 1/2 tsp Cinnamon

  • 45 g Erythritol

Method

  • Preheat oven to 180 C
  • Mix almond flour, erythritol, cinnamon and butter initially with a fork and then with your hands, forming a ball of dough.
  • Leave the dough in the fridge for about 30 minutes.
  • In the meantime, peel the apples and slice into thin half moon pieces (see photo).
  • Squeeze the juice of one lemon onto the sliced apples and toss with two spoons, coating them. This stops them from turning brown before they are baked.
  • Take the dough out of the fridge and press it into the base of a lined baking tin. Spread and work it evenly with your hands. working it 2-3 cm up the sides of the tin.
  • Arrange the sliced apples in a circle in the baking tin, as in the photo.
  • Mix the melted butter, cinnamon and erythritol and brush the mixture over the apples.
  • Bake at 180 C for circa 30-40 minutes
