Ingredients

  • Baby Bell Peppers

  • Goats Cheese

Method

  • Pre-heat oven to 180 C
  • Cut the top off the baby peppers. Remove white bits and seeds and rinse under water.
  • Sprinkle a small amount of salt inside each pepper.
  • Fill the peppers with goats cheese and stand them tightly in a greased oven-proof ramekin. You can stabilise them with tooth picks by sticking one toothpick through three peppers etc.
  • Make sure they are stood upright otherwise the cheese will flow out whilst baking.
  • Pop the pepper heads back on each pepper.
  • Bake in the oven for 20-30 minutes.
