There is pitifully little work to be done to make this blueberry mug cake, and enormous pleasure to be derived from its consumption.

Ingredients

  • 1 tbsp melted Butter

  • 1 1/2 tbsp of Erythritol

  • 1 Egg

  • 1 tbsp Coconut Flour

  • 1/2 tsp Baking Powder

  • 1/2 tsp Vanilla Extract

  • Topping
  • 10 Blueberries

  • 100 ml Double Cream

  • 1 tbsp Erythritol (adjust for sweetness)

  • 2 drops Liquid Stevia

Method

  • Mix all ingredients together with a fork.
  • Press two blueberries into the mixture and microwave in a greased ramekin or mug for ca. 60 seconds.
  • Whip the double cream and erythritol until stiff.
  • Cover the blueberry mug cake with the whipped double cream.
  • Chop 3 Blueberries into small pieces and add 2 drops of liquid sweetener. Stir.
  • Decorate the top of the mug cake with 5 blueberries.
  • Add the chopped blueberries on top, letting the juices run down the sides.
