Lebkuchen always reminds me of Germany and the most wonderful Medieval Christmas Market in the world… selling Glühwein, Bratwurst, Kartoffelpuffer, Schweineschnitzel… and Lebkuchen… 

Delicious German Christmas cookies that are very similar taste-wise to gingerbread. Beautifully spiced, smothered in a chocolatey covering.

Ingredients

  • 245 g Almond Flour

  • 3 Eier

  • 170 g Erythritol

  • 1/4 tsp Arrow Root

  • Low Carb Chocolate

  • Lebkuchen Spice
  • Lebkuchen Spice:

  • 36 g Cinnamon

  • 10 g Cloves

  • 6 g Ginger

  • 4 g Cardamoms

  • 4 g Nutmeg

  • 2 g Coriander

  • 2 Anise Star

Method

  • Preheat oven to 180 C
  • Put almond flour, erythritol, Lebkuchen spice and arrow root in a food processor and mix until the dry ingredients are combined.
  • You can also use a fork… you just need more energy 💪🏼
  • Add three eggs, mixing well after each one.
  • The mixture will be moist, so not like a dough.
  • Using a spoon, put small mounds of mixture onto a lined baking sheet, and with your fingers form them into round biscuit mound shapes.
  • Bake for approximately 15 minutes.
  • Cool on a rack.
  • Melt the chocolate in a double boiler. Try not to overheat.
    Cover the cooled biscuits.
  • Best kept refrigerated.

  • MACROS per Lebkuchen: 2g Carbs – 15g Fat – 5.5g Protein

    Tried this recipe and it came out very good. Would it be possible to make measurement of spices in tsps please to make it more easy to follow
