Chips! Although these look just like regular chips, they are actually made from celeriac.

Celeriac, what’s that? I think they call it celery root in certain parts of the world.

Celeriac is a kind of ugly, knobbly looking bulb that doesn’t look appetising at all, but if you ever get beyond the hairy and gnarled exterior, you’ll discover a delicious root vegetable with a mildly sweet and aniseedy flavour.

Ingredients

  • 1 Celeriac ca. 600g

  • 1 tbsp Olive Oil

  • ½ tsp Smoky Paprika

  • Himalayan Salt

  • Homemade Ketchup

Method

  • Preheat oven to 200 C
  • Line a baking tray with a piece of baking paper.
  • Peel the celeriac with a vegetable peeler
  • Cut the peeled celeriac in half,
  • Slice into 1cm / 0.5″ thick chips
  • Put the celeriac chips in a large bowl and coat in 1 tbsp of olive oil and smoky paprika.
  • Place the celeriac chips on the baking tray in a single layer making sure there is a bit of space around each chip.
  • Bake for about 15 minutes.
  • Carefully turn each chip over and bake for another 10 minutes, until the tops are nicely blistered and lightly charred in places.
  • Sprinkle with salt and consume immediately, preferably with homemade ketchup.
