FUDGY BROWNIES

I don’t know why people don’t make Birthday Brownies all the time – they’re so easy and so wonderful. Brownies are much quicker to make than a cake, and they look so beautiful piled up in a rough-and-tumble pyramid spiked with a birthday candle.

Definition of a Brownie: “A brownie or broonie, also known as a brùnaidh or gruagach, is a household Elf from Scottish folklore, that is said to come out at night while the owners of the house are asleep and perform various chores and farming tasks…”

The only Brownie in this house is me….

Ingredients

  • 100 g Fine Almond Flour

  • 40 g Cocoa Powder

  • 1 tsp Baking Powder

  • 60 ml Single Cream

  • 150 g Melted Butter

  • 150 g Melted Coconut Oil

  • 3 Eggs.

  • 150 g Erythritol

  • 1 tsp Liquid Sweetener

  • 1 tsp Vanilla Extract

  • 1/2 tsp Salt

Method

  • Whisk the eggs, liquid sweetener and erythritol until creamy and frothy.
  • Add the whipping cream, vanilla extract and salt. Whisk.
  • Mix the almond flour, baking powder and cocoa together until well combined.
  • Slowly add the dry ingredients to the creamy mixture, stirring well.
  • Mix melted butter and coconut oil together. Add to mixture with a spoon and combine well.
  • Bake in a lined 8 inch/20 cm baking tin
  • for 20 minutes.
  • When cooled cut into approximately 25 pieces á 4cm square.
