Ingredients

  • 100 g Almond Flour

  • 4 tsp Coconut Flour

  • 60 g Unsalted Butter – melted and cooled

  • 25 g Erythritol

  • 5 drops Liquid Sweetener (or increase erythritol)

  • 1 small Egg

  • 1 tsp Baking Powder

  • 1/4 tsp Xanthan Gum

  • 1/4 tsp Himalayan Salt

  • 1 1/2 tsp Vanilla Extract

  • 3-4 tbsp Desiccated Coconut

  • Low-carb or homemade Chocolate

Method

  • Preheat oven 160 C
  • Whisk butter and erythritol until creamy.
  • Add egg, vanilla extract and liquid sweetener. Whisk.
  • Sieve coconut flour, baking powder, salt and Xanthan gum. Add to mixture. Whisk.
  • Add the almond flour, form into a dough with your hands.
  • Roll into a sausage and divide/cut into 12 pieces.
  • Roll each piece into a little ball, flatten slightly and form a nose at one end.
  • Bake in the oven for 15-20 minutes or until slightly browned.
  • Make the chocolate.
  • Pour the chocolate into a small high bowl.
  • Let the chocolate cool until it has a thicker consistency.
  • Holding the nose of the hedgehog, dip the body into the chocolate and place on a rack. You need to do this in batches.
  • You may need to sit the little bowl in a dish of boiling water halfway through because of the chocolate setting.
  • Whilst the chocolate on the hedgehog is still damp, dip the body of the hedgehog in a bowl of desiccated coconut.
  • When all the hedgehogs are coated in coconut, take a toothpick and dip it into the thickened chocolate, make a blob of chocolate for eyes and nose on each hedgehog.
