Ingredients

  • 150 g Almond Flour

  • 75 g Powdered Erythritol

  • 1 Egg White

  • 1/2 tsp Baking Powder

  • 1/2 tsp Almond Extract

  • 1/2 tsp Lemon Extract

  • Pinch of Salt

Method

  • Preheat oven 160 C
  • Whisk egg white and erythritol until stiff.
  • Add all other ingredients; mix initially with a fork and then with your hands, forming a ball.
  • Roll out between two sheets of greaseproof paper.
  • Cut out biscuits with a biscuit cutter, half of them with a heart or a round hole cutter.
  • Bake in the oven for ca. 10 minutes until lightly browned.
  • When cooled, sandwich together with home-made or low-carb strawberry jam.
  • Sieve powdered erythritol lightly over the biscuits.
  • Makes approximately 15 biscuits.
