Ingredients

  • 200 g Chicken Fillet

  • 50 g Baby Plum Tomatoes

  • 1 medium Avocado (136g Fruit)

  • 2 tbsp Freshly pressed Lemon Juice

  • 1/2 tbsp Freshly Chopped Basil

  • 1/2 tsp Liquid Stevia

  • Salt

Method

  • Mix Lemon juice, basil, sweetener and salt in a small bowl
  • Chop the tomatoes into small pieces
  • Cut the avocados in half, remove stone and make slices in one direct, then slices in the other. You will now be able to spoon the avocado out of the skin directly into a large bowl
  • Add the chopped tomatoes
  • Add the lemon and basil dressing and mix with two spoons. Season to taste
  • Fry the chicken fillets for 4-5 minutes on each side or until done.
  • Serve the Salad with the fillets, on top or however you like
