… I’ve started to reminisce about food shopping in days gone by… where people didn’t have a crazed look in their eyes, attempting to stay two metres apart whilst frantically grabbing pasta (good thing we don’t eat it anymore) and toilet rolls from the shelves – Yes, they’re at it again!!

SAVOURY SHREDDED CABBAGE WITH GROUND BEEF

A wonderfully savoury ground beef and cabbage delight

Ingredients

  • 250 g Ground Beef

  • 300 g Shredded White Cabbage

  • 1/2 Finely Chopped Onion

  • 1 Crushed Garlic Clove

  • 3 tbsp Balsamic Vinegar

  • 1 Crumbles Vegetable Stock Cube

  • 3-4 tbsp Healthy Oil

  • Salt and Pepper

Method

  • Stir fry the shredded cabbage in hot oil until slightly soft and browned. Set aside
  • Fry the onion for a few minutes. Add the garlic and fry for a minute
  • Pushing the onion and garlic to one side in the pan, add the ground beef and fry
  • Stirring, combine the onion, garlic and meat. Add the crumbled stock cube
  • Stir well then cover and simmer for several minutes
  • Add the cabbage to the meat, stirring well, then add the balsamic vinegar and stir until combined. Simmer for a further 5 minutes
  • Taste to see whether it needs more seasoning, salt & pepper
