Celeriac (aka celery root)  – the knobbly, bulbous root vegetable that wouldn’t win a beauty contest. 

Perhaps that’s why celeriac languishes on supermarket shelves, another worthy but under-appreciated vegetable. It’s a shame; it may be knobbly on the outside but it’s sensational on the inside.

Celeriac may not be the most keto friendly vegetable, but it contains multiple nutrients including: vitamins C, K, B-6, Potassium, Phosphorus and fibre. Its distinctive flavour – think celery meets parsley – is too good to ignore

Ingredients

  • 300 g Celeriac

  • 60 g Grated Mozzarella

  • 1/2 tsp Garlic Powder

  • 1/2 tsp Onion Powder

  • 2 tbsp Melted Butter

  • 300 ml Vegetable Stock

  • Salt and Pepper

Method

  • Boil the Celeriac in the vegetable stock until tender. Drain
  • Add grated mozzarella, garlic powder, onion powder and melted butter
  • Mix in a food processor or hand held blender
  • Add salt and pepper to taste
