I don’t remember the first time I ate one, but it was definitely within the last 10 years and not before. 

I now love them… exotic, dark and knobbly as a dragon’s egg.

Ingredients

  • 200 g Baby Plum Tomatoes

  • 2 Medium Avocado

  • 1 Heaped Tablespoon of chopped Basil

  • 1 medium Lemon – Juice of

  • 1/2 tsp Liquid Stevia

  • 1/4 tsp Himalayan Salt

Method

  • Mix Lemon juice, basil, sweetener and salt in a small bowl
  • Chop the tomatoes into small pieces
  • Cut the avocados in half, remove stone and make slices in one direct, then slices in the other. You will now be able to spoon the avocado out of the skin directly into a large bowl
  • Add the chopped tomatoes
  • Add the lemon and basil dressing and mix with two spoons
